You can thank my parents for this blog.  Not a day of my life, as far back as I can remember, has gone by without the bubbling sound of water boiling in a kettle, steam rising above the glass sitting in front of my father while he contemplated his existence, and me getting yelled at for jacking the sugar cubes my mom made.  This is what they brought from Iran, a seldom spoken, ever-present love for tea – “chai,” as they call it – the axis of countless gatherings, friendships, and conversations, as rarely could there be two people in a house without a whispering pot between them.  Indeed, our social world would have stopped spinning were it not for this tea (black tea, of course), and I am not entirely convinced that equal calamities would not befall the beating of our hearts, gravity, the shining sun, the moon’s pull, democracy, society, civilization, and anarchy.    

Tea is second only to water as the most consumed beverage in the world, and I am proud to say that my household is a major contributor to this statistic.  For that reason, I would like to share my self-endowed expertise on the subject of black tea with you.
